Duck Potatoes is the layman name for Sagittaria also known as arrowhead. It is one of the twenty species of the aquatic plants. It is harvested in the winter, fall, and spring of the year. It is an edible vegetable root cultivated from the wild or in places as crops in East Asia and North America. Duck Potatoes have large leaves with flowers making it easy to spot in the wild settings such as ditches, lakes, and swamps where it grows underwater.

The name is derived from the potato appearance and it grows underground. The plant has large leaves that are firm that spread about four inches wide and two feet long. The leaves taper toward the stem and grow in a fan shaped rosette from the underground rootstocks. It flowers into a white blossom having three petals. The flowers are elongated on long thick stalks about 12 inches long with an abundance of leaves.

The Duck Potatoes grow in a tubular form. The leaves are generally on the surface of the water with the remainder of the plant submerged in water. The flowers are considered unisexual with the female flowers being located at the base of the plant and the male flowers located higher on the plant.

Native Americans eat Duck Potatoes peeled, raw, boiled, or similar to a potato. It is a starchy food much like the namesake and consumed in the same fashion. It can be used to enrich flour breads or added to soups for additional nutritional values to the meals.

Native Americans also use the duck root for medical purposes to help with digestives issues. The root is grounded and used as a poultice for wound and boils. The entire plant is used for a sleep aid for children, to treat gonorrhea, constipation, and arthritis. It is also used as a means to reduced fevers in young children and babies.

The healing wonders of the plant have been used for a long time with people that know the effects. Curing the health issues with a natural alternative makes this plant sought after.

The natural beauty of the Duck Potato is well known by naturalists and the Native Americans as they see them in more frequently in the natural habitat than most people. The plants are revered for the natural healing remedies as well as the tastes of the roots often used for food by the Native Americans.

Eat Fresh Home Grown Berries! Before purchasing or planting a berry plant, it is a good idea to know how many berries each variety will produce and how the berry harvest will be used or given away. It is hard to estimate the amount of berries the family will eat yet it is a good guess to say that the plant will provide more than the average family can consume. Plan for the berries to be harvested, prior to purchasing the plants. Stock up on freeze bags and canning jars since it is a good bet there will be plenty at the harvest time to freeze and make other food products with the berries. It is also a good idea to consider friends and family that will enjoy the berries since you will have more than enough to share if you are not going to can or freeze the extras.There are several types of berry plants. The first type is the blackberry called the Rubus fruticosus. This plant loves full sun and well-fertilized soil. It needs to be planted in a well-drained soil without the possibility of standing water. To manage the growing plant, it can be trained for a trellis. The average harvest for the plant is one ½ to 2 quarts per healthy plant. The new cultivars produce of 10 pounds or more of berries every year.The Northern Highbush Blueberry is called Vaccinium corymbosum. It is more of a bush type plant that needs full sun with rich fertilized sandy soil. The plant has an average life of fifty years and can grow up to 10 feet tall. Keep in mind the size of the mature plant when planting the blueberry plant. The aver harvest of the younger plants that are healthy is about 1 to 3 pound with the mature plants producing 8 to 15 pounds per bush.Red Currants are called Ribes rubrum. They need afternoon shade but should have early morning sun. they grow best in soil consisting of clay with rich fertilizer added. They require regular watering during the growing season as well as when the fruits are beginning to form. Adding mulch over the shallow roots is highly recommended. The mature plans will produce about 3 pounds while other plants in the right conditions produce up to 10 pounds of berries per plant.Strawberry plants are called Fargaria x ananassa thrives in the full sun. The soil needs to be well cultivated with plenty of fertilizer or a blend of 6-24-24 commercial fertilizer in the early spring. The soil needs to be well drained and water regularly as well as weeded frequently. The plants are best grown in rows. They produce about ¼ -1 pound per foot in the second year of growth. The third year of the plant’s life is when new plants should be planted to replace the aging strawberry. Strawberry plants produce runners every year and the runners need to be inserted into the ground so they become the new plants the following year. Depending on the growing conditions, the plants will produce about 10 to 15 pounds of berries every year.Each berry plant needs special sun exposure and water requirements. Make sure to observe each plant based on the species for optimal harvest and plant life. Use mulch for the berry plant to reduce weeds and keep the plant moist. As the plants grow, make sure to prune and train the plants to encourage new growth. The pruning rejuvenates the older plants for a longer life and keeps the keeps the plants from growing out of control.

My closest friend has always had a green thumb and though we share just about all common interests until recently we differed on home gardening. I had never really given any type of gardening any thought and had always viewed her passion for this as a waste of time. Things changed recently however when I found out that I could save quite a bit of money by growing my own vegetables.

Being a vegetarian my diet consists mostly of earth grown foods and with the price of veggies rising and becoming over inflated my girlfriend approached me and told me that she was going to begin growing her own vegetables both to save a few dollars and to get a better quality product. I was interested though my motivation was solely saving money. I found myself dreading working in her indoor garden but I was surprised at how much fun I was having.

Perhaps it was because I was spending more time with her and perhaps it was because I was learning something new but I began looking forward to the three days a week that I was spending in the greenhouse. As I began to get a hold on gardening and working with different types of soils and plants, I was surprised to find there was so much more to it than simply throwing seeds into the ground and watering things.

Several of her grow lights went out within my first couple of visits. I didn’t think these lights were important but my assumption was quickly refuted by my girlfriend when she explained that these types of lights are designed specifically to help plants grow. I actually spent one day of my first week hunting down specific types of commercial lighting for the greenhouse. The lights she wanted were fairly expensive but we went halves on the cost as I felt as though we were becoming partners in gardening.

Once the new lights were installed we got back to the ground work. Three weeks later I was pleased to see the bell peppers I planted on my own begin to sprout. It was at that point that I admitted to both myself and my girlfriend that I was enjoying doing garden work. Not long after that the rest of our first batch of vegetables sprouted and some even ripened and were ready to be eaten.

I’ll say this about growing your own food. It’s hard work and it takes time to grow these things however the flavor and even the size of the vegetables far outclass anything you find in the store. In addition to this, home grown vegetables contain no unnatural preservatives and go into your kitchen fresh; no weeks of shipping are involved. This experience leads me to believe that I will never buy vegetables from any store again.

For those of you who have never eaten anything homegrown, you need to at least once. Once you decide to go this route you’re in for a treat and I can guarantee that you too will begin growing your own vegetables. Before I became a vegetarian I had eaten a steak that came from a cow raised by my friend. This was much like vegetables in that the homegrown food was far better than any store bought product. Though it takes care and effort to grow your own food, the work is worth it. Your body and your bank account will thank you for it!
